Harmonize Your Chakra -Rainbow Soba Noodle Salad
I love summer! I love spring! They are filled with bright colors. But brightness stands out even more in the presence of cool hues.
When people ask me “What is your favorite color?”, I always tell them… “RAINBOW!!”
I just love all the colors because they each have uniqueness.
My cooking is often simple but fresh and bright. Ton of colors in a bowl makes me happy when I am just looking at it!
As a Japanese, I cannot skip noodles. Especially Soba noodles. They are staples in a Japanese kitchen. You can eat hot or cold so growing up, Soba was my favorite a year around. I remember my grandma used to take me to this authentic Soba place. I sat at a counter, select a flavor, and a master chef cooked me noodles right there in front of me to its perfection. I loved the minimal and simple way of eating since when I was a child. My favorite was plain Soba with umami packed soy based dipping broth. I felt like I could sit there all day long.
As I spent in my twenties in a totally different culture and country, my palate opened up to new dimension! Especially living in Los Angeles, California taught me how to cook simple but extravaganza.
In my tiny apartment in a hot summer, Soba salad became my essential. I basically pick colors I want to see (most of the time, seven chakra colors!) and toss everything in a bowl!! If I ever could eat a rainbow, I am sure it will taste just like this.
This recipe has so much variation as you can play around with different veggies and dressings. I love grapefruit, orange, peanut butter & ginger, raspberry… List goes on.
